Any kitchen needs various appliances, starting from the lowly knife sharpener, to kitchen knives, chopping boards, hand blenders, juicers, espresso machines, right up to hi-fi microwaves, ranges and refrigerators. We will for now concentrate only on major kitchen appliances.

Microwaves
There has historically been some insistence from quite a sizeable part of the cooking fraternity that microwaves haven't measure up to the challenge of cooking dense foods such as lasagne, which often seemed to end up with burnt edges and uncooked centres. This happened mainly because conventional microwaves operate by switching the power on and off throughout the cooking time. With the later inverter technology, this problem has been addressed and very soon no doubt the chorus of complaints will be converted into praise.

Microwaves powered by inverter technology do a far better job at cooking with the food being cooked thoroughly and evenly. Even if you are simply using your microwave to re-heat food this means that the food will heat more evening throughout. How's this been made possible? Well, inverter technology ensures that the power does not fluctuate as it did in older models. The simple trick of keeping the power level constant throughout the cooking time has improved the cooking capability of microwaves.

When you choose a microwave, try to go for physically larger models since it's been observed that larger models generally tend to perform better. You should also be particularly choosy about the turntable (if choosing a turntable rather than static model) since your food will be evenly cooked only if the turntable rotates smoothly. Choose a model equipped with the latest sensors since they are useful indicators in preventing your food from being overcooked or undercooked.

There's a new variant of microwave which has created quite a stir in the market. It is known as over-the-range-microwave or microhood. A microhood mounts over your range or hob and is equipped with dual fans to ensure a proper exhaust outlet for the hob below it. This has proved very popular with kitchen owners who value compactness. If your budget allows, you may also do yourself a favour by buying a model which has convection feature, along with halogen lights that act as a speed cooker. There are also a number of sophisticated dual function microwaves which incorporate an oven as well as the microwave, allowing you to use both together to good effect.

Ranges and Cookers
Many ranges and cookers are now equipped with useful features such as warming drawers and bridge burners.

A warming drawer is an innovation which has significantly increased the usefulness of a range. It's basically a drawer which keeps the food warm or warms the plates and bowls before food is served in them. In some models you can even cook small items in the warming drawer.

A bridge burner is a burner which is placed in the gap between two regular burners. This helps when cooking in very large or awkwardly shaped saucepans.

Ranges and cookers are also available with convection capability which circulates hot air throughout the oven ensuring faster cooking and more even browning. Add to this the latest timers and you have a piece of equipment which is really versatile. As if this is not enough, some ovens can also operate on dual fuel with one burner running on electricity and the other on gas simultaneously.

When you go shopping for a range or cooker it is worth keeping in mind several things:

Always choose a model which has sealed burners with removable burner pans and caps. It should also have a self-cleaning feature with a smooth top which may double up as an extra workspace when the oven is not in use.

The oven door should open and shut smoothly and the windows should afford good visibility.

Many ranges and cookers now offer dual fuel whereby you get the best of both worlds: an electric fan assisted oven for rapid even cooking and a gas hob for controllability.

Refrigerators
Refrigerators now come in a range of sizes. The design you choose will be a matter of personal preference, the size of your family and the layout of your kitchen. There are primarily three designs top freezer, bottom freezer and side-by-side. Finish is also a matter of personal preference with many manufacturers now offering modern stainless steel finish refrigerators. There is of course the option of a built-in refrigerator wherein the front is covered by a cabinet door to match the rest of your kitchen. Again a simple issue of preference.

Top Freezers
This is the cheapest, sturdiest and arguably the most popular option. If you are willing to spend a little more and choose the top end models you can enjoy a range of features such as internal water dispenser with integrated filter, icemaker, humidity-controlled crisper drawers, spill-control glass shelves, door mounted storage bins and a some models even come with a light in the freezer compartment too.

Bottom Freezers
The convenience of having the entire refrigerator compartment at eye level is the biggest plus with these models. It does of course mean that you need to bend down to access the freezer section. Again, some models are equipped with freezer lights. Some manufacturers have integrated a bottom freezer layout with a side-by-side format by placing a side-by-side atop a freezer. So, the refrigerator then has three doors one for the freezer at the bottom, the other two for the top half. Though these models are costlier and have less space inside, the convenience outweighs this for some people.

Side-by-side
Sometimes referred to as 'American style', side by side units have both a fridge and a freezer running the full height of the appliance, with a separate door for each. The relative size of fridge and freezer compartment varies from manufacturer to manufacturer. In addition to the popular features of other formats, most models in this category have through-the-door ice and water dispensers. Though this option is very convenient and allows you to access ice and chilled water without opening the door, this is also the most repair prone part of these refrigerators. So, before you go for one, weigh your options carefully.

Refrigerator Drawers
These are the latest in speciality refrigerators. Though they have a glamour quotient (and of course a hefty price tag) attached to them, functionally they are not really any better than other standard models -- just less visible!
